Tito has kept the same character for more than a century: generous Tuscan cooking and a deliberately irreverent welcome. The kitchen takes the food seriously and very little else — the house motto has long been that everything here is fair game except what is on the plate. It is the oldest trattoria on the street, and among the warmest.

Ribollita is the soup of the Florentine winter: stale bread, cavolo nero, white beans, boiled and then boiled again. It belongs to the cold months, and it improves with each day it is kept. Tito serves it among generous portions of plain Tuscan cooking, without ceremony. Order it as a first course and continue, or make it the meal. The trattoria is an easy walk from the residence, just past Piazza della Libertà.
